Casein is a milk protein used in many foods as a binding agent. Milk proteins are healthier if consumed when not denatured. Casein can be found in two main types: edible and industrial. Edible casein is widely used in both medicine and food, both for nutritional value and as a binder. Industrial casein is used in paints, cosmetics, and many types of adhesives. Casein is the main protein found in milk and contains 21 amino acids. It makes up approximately 80 % of the total milk protein. Above all, casein is a source of several functional peptides with different properties for instance nervous system and body's fortification, behavior, intestinal comfort, cardiovascular system. Caseins and caseinates are widely used in the food and non-food industry where they provide functional benefits of structure formation, emulsification, water binding, foaming, viscosity and heat stability.
Casein may be processed in view of being transformed at a later stage as caseinates as they are not soluble. As a consequence, casein appears frequently in statistics in place of caseinates. This is the case for applications like sports nutrition, infant formula or even clinical nutrition. The major uses of casein until the 1960s were in technical, non-food applications such as adhesives for wood, in paper coating, leather finishing and in synthetic fibers, as well as plastics for buttons, buckles etc. During the past 30 years, however, the principal use of casein products has been as an ingredient in foods to enhance their physical (so-called functional) properties, such as whipping and foaming, water binding and thickening, emulsification and texture, and to improve their nutrition. Casein can be either lactic acid casein, mineral acid casein, or rennet casein.
Edible Casein can be used in products such as Cereals, Vitamin and Mineral Tablets, Instant Drinks, Nutrition Foods, Pasta, Infant Nutrition, Sauces and Gravies, Soups and Stews, Bread, Cake Products ,Sweet Goods and Pastries, Custard, Aquatic feeds, Ice Cream, Spreads Filling and creams Puddings, Processed Cheese. Technical Casein can be used in products such as Glues, Cosmetics, Leather Chemicals, Paints, Plastics, Aluminium Foil, Safety Matches, Pigments, Coated Paper, Plywood Industry, Paper Cones, Paper tubes, Paper Chemicals. Europe is the largest producer of casein followed by New Zealand.
